Healthy Cowboy Caviar
One of my favorite summer recipes, hands down! 🤍
This Healthy Cowboy Caviar is fresh, colorful, packed with flavor & comes together in just a few minutes. It’s perfect for barbecues, potlucks, cookouts, or simply keeping in the fridge for easy lunches throughout the week. 😋
✨ INGREDIENTS :
• 1 can organic black beans, drained & rinsed
• 1 cup organic corn (I just defrost & rinse a bag of frozen corn)
• 1 cup organic cherry tomatoes, diced
• ½ organic red onion, finely diced
• 1 organic avocado, diced
• ¼ cup fresh organic cilantro, chopped
• Juice of 2 organic limes (or just the bottled kind!)
• OPTIONAL TO ADD : Juice of 2 organic lemons for a little extra zest
✨ DRESSING :
• 2 tbsp organic extra virgin olive oil
• ½ tsp sea salt
• ¼ tsp black pepper
• ½ tsp garlic powder
• ½ tsp cumin
• 1 tsp raw honey (optional)
Simply combine everything in a bowl, toss & let sit for 10-15 minutes before serving.
Serve with tortilla chips, over grilled chicken, in tacos, on salads, or as an easy side dish for your next summer gathering. I honestly eat it by the spoonful alone!
