It’s easy to skip, but it makes a meaningful difference.Soaking helps break down naturally occurring compounds in legumes that can make them harder to digest. It also allows your body to better absorb the nutrients, making your meal not just healthy... but truly supportive.
In the morning, simply rinse your lentils well & boil them in fresh water until tender. They hold their shape beautifully, which is what makes them perfect for salads like this.

LENTIL SALAD (A Simple, Nourishing Staple) 🌿
INGREDIENTS :
- 1 cup cooked green or brown lentils (soaked overnight, rinsed, then boiled until tender)
- 1 chopped onion
- 1 chopped cucumber
- 10-15 chopped cherry tomatoes
- 1 chopped zucchini
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh parsley
DRESSING :
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 2-3 tsp celtic salt
DIRECTIONS :
1. In a large bowl, combine the cooked lentils with the onion, tomatoes, zucchini, cucumber & herbs (or whatever veggies you are using)!
2. Next, add the lemon juice, olive oil & salt.
3. Mix gently to combine & enjoy!
NOTES :
• Soak lentils overnight in plenty of water. In the morning, rinse well & boil in fresh water until tender (about 20–30 minutes).
• This salad is incredibly forgiving! Feel free to add, swap, or simplify based on what you have. It will turn out a little different each time, and that’s part of the beauty.
• Keep refrigerated.
