Pumpkin Oat Protein Bites
These Pumpkin Oat Protein Bites are cozy, nourishing & just the right mix of sweet + salty. Each bite is filled with wholesome ingredients, packed with protein & kissed with warm fall spices.
They’re one of those snacks that make you feel good and taste good... perfect for busy days, post-workout fuel, or a cozy moment with your coffee. And the best part? You can mix it up! Dip some in chocolate, stir chocolate chips into others, or leave a few plain & simple. However you roll (literally 😉), they’re delicious every time.
High-Protein Pumpkin Oat Energy Bites 🍫
✨ INGREDIENTS:
For the bites:
- ½ cup organic peanut butter (or almond or cashew butter)
- ¼ cup pumpkin puree
- 3 tbsp pure maple syrup (or honey)
- 1 ½ cups organic rolled oats (I used gluten free)
- 2 tbsp flaxseed meal
- 2 scoops vanilla (or unflavored) protein powder
- 1–2 tsp cinnamon
- Pinch of sea salt
- Optional: 2-4 tbsp mini dark chocolate chips or cacao nibs
For the coating:
- ¾ cup dark chocolate chips (or sugar-free chocolate)
- 1 tsp coconut oil
- Flaky sea salt, for topping
🥣 INSTRUCTIONS:
1. In a large bowl, mix peanut butter, pumpkin puree, maple syrup & protein powder until smooth.
2. Add oats, flaxseed meal, pumpkin spice & salt. Stir until well combined.
3. Roll into about round bites & place on a parchment-lined tray.
4. Freeze for 15-30 minutes.
5. Melt chocolate chips with coconut oil in 30-second microwave intervals, stirring between each until smooth.
6. Dip some bites into the melted chocolate & place them back on the tray.
7. Sprinkle with flaky sea salt before the chocolate hardens.
FOR VARIETY:
1. Stir mini chocolate chips into a few before rolling into balls.
2. Leave a few plain for a lighter, simple version.
Freeze or refrigerate for 30 minutes to set, then store in an airtight container in the fridge or freezer depending on what you prefer texture wise!
