INGREDIENTS
1 cup egg whites (I buy the ready to go carton to make it easy)
2 eggs
1 cup rolled oats
1 cup pumpkin puree
1 tsp baking powder
Cinnamon (a couple dashes)
Salt (pinch or two)
Pumpkin pie spice (optional if you want more of a pumpkin taste)
Olive oil (for the pan) (can also use butter or avocado oil)

INSTRUCTIONS:
1. Heat a skillet with a touch of olive oil.
2. In a blender, add egg whites, eggs, oats, pumpkin puree, baking powder, cinnamon, salt & pumpkin pie spice (if you are choosing to use it).
3. Blend until smooth.
4. Pour batter into the skillet, making small pancakes.
5. Cook until bubbles form on top, flip & cook the other side.

Serve warm with your favorite toppings (maple syrup, berries, hemp hearts, Greek yogurt or nut butter are all amazing!).
