Protein Pancake Muffins
Alrighty beauts! These healthy Protein Pancake Muffins are SO DELICIOUS & guaranteed to add some ease (& joy) into your breakfast, snack & lunch ideas! 💥 Loaded with goodness & easy to make (can we say put it all in the blender, bake & go - yes please ☺️), I wanted to create something the whole family will enjoy PLUS reap the benefits from.
These can be made gluten free, as well — just use your favorite gluten free pancake mix. Recipe below! ⬇️
INGREDIENTS :
▫️1/2 cup egg whites ( tip : make it super easy & purchase the organic egg whites in a carton)
▫️2 tbsp ground flaxseed
▫️1 cup cottage cheese
▫️2 bananas
▫️1 tbsp maple syrup
▫️1 1/2 cups pancake mix (any kind you have on hand at home!)
▫️1/2 cup milk of your choice (I used my hemp milk recipe)
▫️1 tsp vanilla extract
▫️1 tsp salt (I used himalayan )
▫️1 tsp cinnamon (highly recommend Ceylon cinnamon 😊)
✨TOPPINGS :
▫️Fresh cut up strawberries + Enjoy Life Mini Chocolate chips
▫️Fresh blueberries
▫️Have fun & be creative!
DIRECTIONS :
1. Preheat oven to 350 (I used muffin liners for this batch but you can spray with a healthy oil, such as avocado or olive oil, instead, too)
2. In your blender, add ALL of the ingredients (minus the toppings ) & blend until smooth.
3. Pour blended batter into individual muffin tray slots.
4. Add in the toppings of your choice! For this batch I did half with blueberries & the other half with strawberries plus mini chocolate chips.
5. Bake for around 20 minutes.
6. Remove from the oven & let cool for about 15 minutes. Enjoy!
