5 Ingredient Healthy Breakfast Cookies

I’m always wanting to simplify & give more ease to our early school mornings so I thought to create something that would help & these breakfast “cookies” do just that! They are simple, hearty, delicious & only 5 ingredients that you most likely already have at home – a total WIN WIN. You can eat them as is, or pair them with something else of your liking. Regardless, it’s been super nice to have these on hand as a great easy morning breakfast option.

-2 cups gluten free organic oats
-3 large overripe bananas
-1/2 cup ground organic flaxseed
-1/2 cup nut butter (I used organic sunflower butter)
-a couple dashes cinnamon
-1/4 cup chocolate chips (OPTIONAL)
-2 scoops of your favorite organic protein powder (OPTIONAL)

1.Preheat the oven to 350 degrees.
2.First smash up the bananas with a fork.
3.Then mix in the rest of the ingredients until fully combined.
4. Either form balls with the cookies with slightly wet hands OR use a cookie scooper (my preference). Place each “cookie” ball on a larger baking sheet lined with parchment paper.
5. Press each ball into a cookie shape or bake as is for a more rounded shape.
6. Bake for 10-11 minute or until slightly golden around the edges.
7. Let cookies cool for 10 minutes or so before eating!
PS. These can be eaten cold, as well or heated up briefly if wanting a warmer morning breakfast cookie. ?
