Spaghetti Squash Dish

I've shared this recipe on repeat to some of my closest friends... figured it was about time I share it with you, too! It's easy, healthy & satiating.

INGREDIENTS :
* 1 large spaghetti squash
* 1 onion, diced
* 2 cups chopped mushrooms
* one bag cauliflower rice
* one 25oz jar organic marinara sauce
* 3 eggs whisked
* a couple dashes of basil
* a couple dashes of nutritional yeast
* salt and pepper, to taste

OPTIONAL :
* feel free to add any other chopped veggies or beans you would like in the dish!
* you can choose to add organic ground turkey or meat of your liking to this dish, as well.

INSTRUCTIONS :
1. Preheat oven to 400 degrees.
2. Cut spaghetti squash in half lengthwise (be VERY careful when doing this as it is hard to cut -- I highly recommend googling easy ways to cut a spaghetti squash for helpful tips). Place spaghetti squash cut side down on a parchment lined baking sheet. Bake for about 20 minutes -- the skin of the squash should give when you press on it.
3. Sauté veggies lightly in a separate pan while squash bakes.
4. Add marinara sauce, basil, nutritional yeast, salt & pepper to the pan and mix well.
5. Once squash is done cooking, scoop out the seeds. Then scoop out the squash threads. Place in an 8×12" greased baking dish.
6. Reduce oven heat to 350 degrees.
7. Add veggie mixture to the baking dish and mix well with spaghetti squash threads.
8. Lastly, add whisked eggs to the baking dish and mix everything well together.
9. Sprinkle plenty of nutritional yeast on top!
10. Bake at 350 degrees for 45 minutes (top should form a slight crust).

Feel free to eat as is or top with avocado, sprouts, hot sauce, etc! ENJOY!
