Soundies: Sourdough Blondies (A Cozy Favorite!)
If you’ve been looking for a way to use up your sourdough discard that feels a little more fun than crackers or pancakes… friend, meet the Soundie.
What’s a Soundie?
Think of it as a happy little mashup:
Sourdough + Blondies = Soundies 😋
Chewy, gooey, golden perfection with just the right balance of sweet & salty! These bars taste like a cookie + a blondie had a love child with a hint of tang from sourdough discard.
They’ve become a fast favorite in our home (& now have an official name to match 😉).
WHY I LOVE MAKING SOUNDIES :
* They’re the easiest way to use up sourdough discard -- no waiting, no long rise.
* They’re naturally sweetened with applesauce & coconut sugar.
* They come together in one easy bowl & make your house smell amazing!
And they’re just plain fun to say. (Soundies!) 😆
INGREDIENTS :
1 cup sourdough starter discard
2 eggs
2 cups unsweetened applesauce
2 tsp vanilla extract
2 ½ cups all-purpose flour (or gluten free flour)
1 stick (½ cup) unsalted butter, melted
1 cup coconut sugar
½ cup brown sugar
1 tsp baking soda
1 tsp salt
1 ½ cups chocolate chips
Flaky Maldon salt for topping (optional but so good!)
DIRECTIONS :
1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, whisk together melted butter, brown sugar, and coconut sugar until smooth.
3. Add eggs, applesauce, and vanilla; mix well.
4. Stir in the sourdough starter discard until fully incorporated.
5. In another bowl, whisk flour, baking soda, and salt.
6. Fold the dry mixture into the wet until just combined.
7. Gently fold in the chocolate chips.
8. Spread batter evenly in the pan (tip: slightly wet hands make it easy to press down).
9. Finish with a sprinkle of Maldon salt if you love a sweet-salty combo (optional)!
10. Bake 25–30 minutes, or until a toothpick comes out clean.
11. Let cool for 10 minutes before lifting out to slice into square bites.
NOTES :
* These bars store beautifully in an airtight container for a few days — if they last that long. 😉
* You can add chopped walnuts, pecans, or extra chocolate on top if you like!

Sometimes the simple things deserve a special name. When I first baked these, I joked with my family that they were like “sourdough blondies" & then my friend suggested "Soundies" (thanks Norina!) & it just clicked! Now the name has stuck & I think it fits juuuuuust right. 😁
