Date Crunch Bites
This is definitely a better-for-you sweet treat that hits every craving — salty, chewy, chocolatey, crunchy... with simple ingredients that fuel you, too. 😊 Recently my friend Michie came over with a date + peanut butter + chocolate concoction that was to die for!!! I decided to add a slight twist to it & add a layer of thin rice cakes to the bottom, along with flaky Maldon salt. This simplified the process a bit (no need to roll out the dates with a roller) & also added an extra nutritional crunch to the taste.
My goal is always healthy, yummy + EASY. 😁
🍫 Date Crunch Bites
INGREDIENTS :
* Thin rice cakes → Light, gluten-free crunch that adds volume w/out heaviness
* Pitted dates → Nature’s caramel! Full of fiber, potassium & natural sweetness
* Nut butter of choice (almond, peanut, sunflower) → Rich in healthy fats, protein & that creamy goodness
* 1 bag (or 2 cups) chocolate chips → Because chocolate makes everything better (& yes, antioxidants too!)
* 3 tbsp coconut oil → Supports energy + helps the chocolate set perfectly
* Maldon salt → Mineral-rich flakes that bring out all the flavor
DIRECTIONS :
1. Line a baking sheet with parchment paper.
2. Lay out your thin rice cakes in a single layer.
3. Flatten pitted dates with your fingers & put onto the rice cakes.
4. Spread a thin layer of nut butter over the dates.
5. Melt the chocolate chips with coconut oil until smooth (I used a double boiler but you could also microwave in 30-sec increments).
6. Spoon chocolate over the top of each cake to cover the nut butter.
7. Sprinkle Maldon salt on top.
8. Chill in the freezer until the chocolate sets!
9. Break up into bite size pieces with your hands.
10. Keep them in the freezer & enjoy!
They’re quick, no-bake, kid-friendly & full of functional fuel (fiber, healthy fats, natural carb) all while feeling like a treat. These have been my personal go-to lately when I want something sweet but steady. 🤎
