GF Wild Blueberry Blender Muffins
You all know I love a good blender recipe! Decided to test this one out yesterday on another snow day & it was a hit in our house.☺️ If you’re looking for a simple + healthy gluten-free wild blueberry muffin recipe, look no further. 🙌🏼
PS. I used organic frozen wild blueberries 🫐 but feel free to swap out the berry for whatever floats your boat.⚡️
INGREDIENTS :
• 2-3 ripe bananas
• 2 large eggs
• 1/4 cup milk of your choice
• 1/4 cup maple syrup (or honey)
• 1 teaspoon vanilla extract
• 1 1/2 cups gluten-free rolled oats
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 1/2-1 cup frozen wild blueberries
DIRECTIONS :
1. Preheat oven to 350°F + line a muffin tin with paper liners or grease with a little coconut or avocado oil.
2. In a blender, first combine the ripe bananas, eggs, milk of choice, maple syrup (or honey) + vanilla extract. Blend until smooth + well combined.
3. Next add the oats, baking powder, baking soda, salt + cinnamon to the blender. Blend again until the mixture is smooth + all the ingredients are well mixed.
4. Gently fold the wild blueberries into the batter using a spoon or spatula.
5. Pour the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
6. Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Let the muffins cool after transferring them to a wire rack.
And enjoy! These are such a great addition for a quick breakfast, a healthy snack or treat. 😋
