Protein Power Bites
These Protein Power Bites are packed with protein & the perfect treat for a quick energy boost (& sweet tooth fix)! They are also a great option for low carb days. ☺️ Needless to say, our entire family is obsessed with them.
Find all the ingredients & supplies I used on my LTK in case that is helpful.
INGREDIENTS FOR THE BASE:
• 1/4 cup coconut oil
• 2 cups peanut butter
• 1 cup ground flaxseed
• 2 cups almond flour
• 1/4 cup maple syrup
INGREDIENTS FOR THE TOPPING:
• 1 cup chocolate chips
• 2 tbsp coconut oil
• OPTIONAL TO ADD : Maldon Salt
DIRECTIONS:
1. Line an 8x8” pan with parchment paper.
2. In a double boiler, melt the coconut oil & peanut butter together.
3. In a separate bowl, combine the flaxseed, almond flour & maple syrup with the melted peanut butter mixture. Stir until smooth & well combined.
4. Transfer the mixture to the lined pan & flatten out with a spatula.
5. Next, in the double boiler, melt the chocolate chips & coconut oil together for the topping part.
6. Pour the chocolate mixture over the peanut butter base & again spread evenly with a spatula. Optional to add (but highly recommended 😋) : top with sprinkled Maldon Salt.
7. Place in the freezer for an hour, then cut into bite-sized squares and enjoy!
Personally I think they are best stored in the fridge, too!
