Easy Healthy Pumpkin Blender Muffins
Who doesn't love an easy & healthy blender muffin recipe? I know for myself, the easier the BETTER. 😊And healthy makes it always an extra bonus. 🙌🏼
With fall around the corner, I wanted to create a go-to pumpkin muffin & these turned out soooooo delicious! The perfect combo of pumpkin spice + soft muffin goodness.🎃
These are gluten & dairy-free, as well. Recipe below! ⬇️
INGREDIENTS :
▫️1/2 can of 15oz organic pumpkin purée
▫️1/4 cup ground flaxseed
▫️3 eggs
▫️2 bananas
▫️1 & 1/2 cups gluten free organic oats
▫️1/3 cup coconut oil
▫️1/4 cup honey
▫️1 tsp vanilla extract
▫️1/2 tsp baking powder
▫️1 tsp baking soda
▫️1 tsp celtic salt
▫️1 tsp cinnamon (highly recommend Ceylon cinnamon 😊)
✨Optional toppings (but highly recommended) sprinkled on top :
▫️Enjoy Life Mini Chocolate chips
▫️Maldon Salt
DIRECTIONS :
1.Preheat oven to 350 & spray muffin tin with cooking spray (I used avocado oil but you can just use muffin liners instead, too)
2. In your blender, add ALL of the ingredients (minus the optional toppings of course) & blend until smooth.
3. Pour blended batter into individual muffin tray slots & bake for around 20-25 minutes (or until when you insert a toothpick it comes out clean).
4. Remove from the oven & let cool for about 15 minutes. Enjoy!
