Cauliflower 'steaks' + Tahini Magic

I've heard of the idea of making cauliflower 'steaks' & finally made the time to figure it out a couple of weeks ago.... and let me tell you, it's been a weekly new favorite HANDS DOWN. When I whipped these up last week & asked if anyone else has made cauliflower 'steaks' before on my IG stories, I got a whopping response of 100% "No" & a TON of DM's asking for the recipe. So, here you go!

CAULIFLOWER STEAKS


INGREDIENTS :
- 1-2 large cauliflower heads
- 1-2 tbsp olive oil
- SPICES : garlic powder, celtic or himalayan salt, paprika or smoked paprika, coriander

SAUTEED TOPPINGS :
- veggies of your choice!
I personally did mushrooms, yellow and green peppers because it's what I had on hand -- definitely recommend.

TAHINI LEMON MAGIC SAUCE


INGREDIENTS :
- 1/3 cup tahini
- 3 tbsp lemon juice
- 2 tbsp maple syrup
- 5-7 tbsp water
- couple dashes garlic powder

DIRECTIONS:
1. Wash cauliflower heads & preheat oven to 425 degrees.

2. Carefully cut the 'steak' slices so that they are abour 3/4" thick. You will have 2-3 bigger steak slices & then some smaller ones naturally due to the shape of the cauliflower.

3. Lightly brush both sides of the cauliflower with some olive oil & place on a parchment lined baking sheet.

4. Add a nice light sprinkle of all the spices on top!

5. Bake for about 15 minutes, then flip the cauliflower steaks over, sprinkle on more of the spices onto that side & bake another 15 (or until the cauliflower looks browned).

6. In a saute pan or skillet, add a little drizzle of olive oil & saute your veggie toppings while you wait for the cauliflower to bake.

7. Next, whip up that yummy tahini lemon sauce -- put all of the ingredients (tahini, lemon juice, garlic powder, maple sryup, water) & whisk really well. It makes a nice amount of sauce that you can easily save for later in a mason jar for either leftovers or even on your next salad (it's THAT yummy).

8. Finally, put it all together! Place your cauliflower steaks on your plate first, top with sauteed vegetables & drizzle on that tahini dressing goodness! I also like to add some chopped up green onions, nutritional yeast & even a splash of some hot sauce. Enjoy!
Eat as is or pair with a nice side salad! Either way, you can't go wrong.
