Easy Homemade Nut Butter

A little over a year ago, my friend, Kathryn, told me she made her own organic nut butter & ended up surprising me with some... and goodness, my entire family was HOOKED.

I couldn't believe how incredible it tasted and the ONLY ingredient in it was roasted almonds -- THAT'S IT! I finally decided to be brave & try it on my own... and honestly, I don't know what took me so long?!!! Now not only am I obsessed, but I look forward to it. It's easy & very fulfilling to make, not to mention comforting to know that my family is eating some super healthy nut butter. BONUS -- it saves you money, as well, because we all know how expensive organic nut butters can get these days (especially almond butter).

So naturally, I had to share this recipe with all of you, too.

HERE'S WHAT YOU'LL NEED :
- 1 12-16oz pack of Organic Raw ALMONDS or CASHEWS or WALNUTS or PEANUTS -- I've even done a combo of 2 at a time
- An oven
- Baking sheet + Parchment paper
- A good food processor -- I absolutely LOVE my Hamilton Beach Food Processor (which is SUCH a steal in price!)
- A glass jar or smaller pyrex bowl to store the nut butter in

OPTIONAL TO ADD :
- dash of Cinnamon
- a couple tbsp's Maple Sryup
- dash of Himalayan or Celtic Salt
- splash of Vanilla
DIRECTIONS :
1. Preheat oven to 350 degrees.

2. Place nuts on the baking sheet with parchment paper & roast for around 10-13 minutes.

3. Remove from oven & let cool for about 10 minutes (this is important so that you don't overheat your food processor!). They should be warm but not hot.

4. Place all roasted nuts in a high-speed food processor & begin to blend. This will take a little bit before you start seeing that the nuts are turning creamy & into a nut butter but be patient! It will be so worth it when it's done. You may have to stop at times to scrape down any nuts that are not getting processed - FYI. It can also get hot from all the blending -- when this has happened to me, I just pause for a minute or two & then continue.

5. When you have reached the creamy consistency that you desire, carefully scrape it out of the food processor & put into a glass bowl. Store in fridge & enjoy!
