Vegan Broccoli Salad Recipe

Where my broccoli lovers at?!!!

We LOVE us some broccoli at our house & of course the nutritional benefits are THROUGH THE ROOF when it comes to this good ol' veggie. #winwin

Since we mainly eat it steamed (and sometimes roasted), I wanted to create a slightly different, & bit more fun , version to add into the dinner roster. I ALSO wanted it to be healthy & light on the system. Without further ado, this recipe came together & fit the bill to a "T". Let me know if you give it a try! xx

1 cup raw cashews
1/3 cup apple cider vinegar
1/4 cup water
1 tsp minced garlic OR 1 garlic clove
1 tsp celtic salt
2 tbsp pure maple syrup
a couple of dashes of black pepper

2 large organic broccoli crowns (florets only) finely chopped or 1 pre-chopped bag of broccoli
1/2 cup diced red onion
1/3 cup dried raisins
1/3 cup roasted salted almonds, finely chopped
1/3 cup sunflower seeds

1. Add all dressing ingredients to blender and blend until completely creamy & smooth.

2. Put broccoli, red onion, raisins and sliced almonds in a mixing bowl.

3. Next pour dressing & mix well. Serve chilled & enjoy!
