Easy Healthy 'hulk' Waffles

Apr 3, 2019 Wellness, Recipes, Motherhood
Our 4 year old has gotten on a major waffle kick recently & since, in my opinion, there really is no healthy store bought waffle out there (trust me, do the research -- read the labels), I decided it was time to figure out a healthier, homemade version instead.

Aaaand since he’s also currently obsessed with super heroes, as well as the color green, why not make these extra special with 'super' powers, right?!

Hence, some EASY HEALTHY ‘HULK’ WAFFLES #forthewin !

1 cup Arrowhead Organic & Gluten Free Pancake & Waffle Mix
1 cup organic Almond Milk or Coconut Milk
2 tbsp organic olive oil
1 large organic egg OR flax egg if wanting to keep these vegan
1 tbsp organic ground flaxseed (for added fiber)
1 tbsp organic hemp hearts (for added protein & healthy fats)
1 scoop of Garden of Life’s Organic Raw Green Superfood (this is what gives them the green hue— you could use plain spirulina, too)
A couple dashes of organic ceylon cinnamon
You will also need a waffle maker — I purchased this non-toxic ceramic one from Amazon & it’s AMAZING!!! I'm obsessed.

•Mix everything together well & scoop about 3/4th cups onto middle of griddle
(this is based on the waffle maker I own above -- yours might need slight adjustments depending on size, etc).

•Close, & flip waffle maker. Set timer at 4 minutes.

•Open when done & simply lift off the waffles! Makes two full waffles or 8 waffle 'triangle pieces'.
We definitely have leftovers, which is convenient & easy to heat up the next day.

In other words,
a total #WINWIN at a fraction of the price of organic store bought waffles and SO. MUCH. healthier!!!
You can simply prep ahead & put all the dry ingredients into little baggies or small pyrex bowls for 'easy to grab' for future use.
Then when you are ready to whip up some waffles, just add the almond milk, oil & egg (OR flax egg) to the already prepped dry mix, stir it up & waffle away!

Hope this helps, friends!
Cheers to healthy, happy living.
