YUMMY CARROT GINGER SOUP

Hiya friends! We've been making this delicious, nutritious, immunity boosting carrot ginger soup in our home for years -- it's a favorite, hands down! This soup is easy to make and only requires a few ingredients, so I thought right now would be a great time to share this warming recipe with you all (since we are all quarantined & could probably use the extra comfort anyhow).

CARROT GINGER SOUP


INGREDIENTS :
- 1.5lbs organic carrots
- 2 organic zucchini's
- 1 organic onion
- 2 frozen cubes of ginger
- 1-2 cloves of garlic
- 6 cups of water (or enough water to cover the chopped up vegetables in the pot)
- Couple of dashes of cumin
- Couple of dashes of celtic or himalayan salt

OPTIONAL TOPPINGS :
- Avocado
- Nutritional Yeast
- Pumpkin Seeds
- Sunflower Seeds
- Trader Joe's chili lime seasoning
- Red hot
- Sriracha

DIRECTIONS :
1. Clean & chop up carrots, zucchini's & onion.

2. Place carrots, zucchini, onions, garlic, ginger & water in a big pot or dutch oven. Make sure the water is covering all the vegetables in the pot well.

3. Bring water to a boil, then simmer for 30 minutes, stirring pot occasionally.

4. Add in cumin & salt, then carefully & slowly pour mixture into a high speed blender ( this is the one we have & love but any high speed blender will do!

5. Blend well & serve with toppings of your choice!


This soup is cleansing, refreshing & comforting all in one bite. Hope you enjoy!
